If you’re trying to build a lower-toxicity kitchen setup, the main things I’d prioritize are solid natural materials, food-safe finishes, and avoiding boards that can shed microplastics over time. Hard maple is generally considered the best all-around surface for knife friendliness and durability, while bamboo is a more affordable plastic-free option. Titanium is the most durable and nonporous, but it can be tougher on knives.
